Two weeks later...

Two weeks in, 15 lbs down.

WOOT!

104 more lbs to go..... urg.. that sounds big, but I know I can get there eventually. Breaking it in smaller goals. the goal now is to hit smaller goals. 9lbs to first goal, then every 25lbs thereafter I think.

 I have a fancy dancy spreadsheet that tells me I'll hit my goal in Feb of next year, just before Valentines day. That I can deal with.

With the Keto diet, that might change, I've been losing more than 2 lbs a week, but I know most of that is water weight. We'll see the true weekly loss soon.

Aside from that, I'm starting to get a handle on working the 5 days/week. I still don't like it, but we'll see how it goes.  My work-bestie just put in her resignation, she's got a much better job somewhere else. Good for her, but I'll miss working with her. Gotta make sure we do playdates :)

As for cooking adventures:

1) Making a chicken stock today- gonna sample it in an hour, and then see how it is. If its good, I'll strain it, (super secret trick-- strain it through a double layer of muslin, and it'll be clear as consommè, with about 1/4 the work.) and reduce it.

2) GF/Lo carb cheezcake. I put the z in to make it fancy. Crust was almond meal flavored with ginger and cinnamon powders. Next time, I do it in a smaller pan, probably with sour cream and more eggs to get the texture closer to right. Pie pan version was okay, but not right- should have been creamier I think for that version. Also the maltodextrin aftertaste from the granular splenda wasn't great. I should be getting my liquid sucralose in either today or tomorrow.

3) Brussels sprouts... OMG, I never liked them as a kid- I think mom made them once. Now though, I Steam them, then fry them in bacon grease, then drizzle about a tsp of balsamic vinegar and let it caramelize. Whoa baby. I have to fan myself just thinking about it.

4) Low Carb Chocolate from TJ's-- Yum, but not too much at once... its got Maltose in it, which will give you the trots if you're not careful. I have it hidden away in the small fridge, in the butter bin, which is opaque and closed, so its mostly out of sight out of mind. I don't crave chocolate much, but when I do, I practically crawl the walls looking for it.
