I think after today, I'm going to start a posting schedule. Tuesdays, Thursdays and Saturdays.

Two weeks later...
Two weeks in, 15 lbs down.
WOOT!
104 more lbs to go..... urg.. that sounds big, but I know I can get there eventually. Breaking it in smaller goals. the goal now is to hit smaller goals. 9lbs to first goal, then every 25lbs thereafter I think.
I have a fancy dancy spreadsheet that tells me I'll hit my goal in Feb of next year, just before Valentines day. That I can deal with.
With the Keto diet, that might change, I've been losing more than 2 lbs a week, but I know most of that is water weight. We'll see the true weekly loss soon.
Aside from that, I'm starting to get a handle on working the 5 days/week. I still don't like it, but we'll see how it goes. My work-bestie just put in her resignation, she's got a much better job somewhere else. Good for her, but I'll miss working with her. Gotta make sure we do playdates :)
As for cooking adventures:
1) Making a chicken stock today- gonna sample it in an hour, and then see how it is. If its good, I'll strain it, (super secret trick-- strain it through a double layer of muslin, and it'll be clear as consommè, with about 1/4 the work.) and reduce it.
2) GF/Lo carb cheezcake. I put the z in to make it fancy. Crust was almond meal flavored with ginger and cinnamon powders. Next time, I do it in a smaller pan, probably with sour cream and more eggs to get the texture closer to right. Pie pan version was okay, but not right- should have been creamier I think for that version. Also the maltodextrin aftertaste from the granular splenda wasn't great. I should be getting my liquid sucralose in either today or tomorrow.
3) Brussels sprouts... OMG, I never liked them as a kid- I think mom made them once. Now though, I Steam them, then fry them in bacon grease, then drizzle about a tsp of balsamic vinegar and let it caramelize. Whoa baby. I have to fan myself just thinking about it.
4) Low Carb Chocolate from TJ's-- Yum, but not too much at once... its got Maltose in it, which will give you the trots if you're not careful. I have it hidden away in the small fridge, in the butter bin, which is opaque and closed, so its mostly out of sight out of mind. I don't crave chocolate much, but when I do, I practically crawl the walls looking for it.

How did you choose your final goal weight? Do you consider it realistic, regardless of the time taken to get there?
What I posted:
I picked my goal weight by what I was in high school. I thought I was the fattest thing on earth then, but now, seeing pictures of myself back then, I think I looked great!
Once I hit that goal, I think I'll change towards a goal physique (I don't need to be skinny/ripped et al, I just want to be healthy.)

Enterprise
Took the kidlet to go see the Shuttle today as it floated on the barge up the river. The view was okay, but would have been much better if we were in Brooklyn.
That white spec is the shuttle. It was really much closer to Brooklyn. Don't mind the random mystery man, no idea who he is.
Back to eating clean after yesterday's party at my aunts. It was a reminder to keep food ready in the freezer ready to go for when I don't feel up to cooking. And that, well, I anticipate to happen fairly often soon, especially with me working more days now. Yesterday we caved and ordered Chinese food. I had beef and broccoli, no rice, and some boneless ribs. I probably ate 50ish carbs easy. Today, about 22g, and I was under calorie too.
Keto seems to be working, I'm not eating half as much now, and I'm not nearly as hungry all the time. The cravings for carbs are still pretty tough. I turned down carrot cake yesterday. I LOVE carrot cake. I'm gonna try to make ultra low carb cheesecake tomorrow. I have a ton of cream cheese in the house too that I need to use soon. Eggs too. Gonna hb a ton of them tomorrow.. Easy snacks=less reason to cheat.
Gonna crash hopefully. Still having a hell of a time sleeping. Wish me luck!

Shower or cooking?
Well, fairwell and adidu 12 hour shifts... Today is the last time we meet, and I'm sad we'll not have the chance to do this again in this place. Not looking forward to swapping to 8 hours, the whole 5 day a week thing kinda scares me. I haven't worked 5 days a week in just about 7.5 years.
The upsides are that I get paid an extra 4 hours/week, and that I no longer have to worry about babysitting. I can put dinner on the table, and we can actually eat like a family. I can put the kidlet to bed to sleep, and the odds are fair that he'll still be sleeping, or be just woken up when I get home.
The downs are that I'll never really sleep again. My weekends off are gonna be me recuperating, and I'm not 100% thrilled about it. Hubbs and I don't like sleeping separately all the time. Oh well, I s'pose we're gonna have to deal with it.
Could be worse. At least I still have a job. Gotta look for the high points in all situations.
Dinner tonight is gonna be steak (pan fried) and mushrooms. I'm a little high on my carbs today, but I think it'll be okay. I'm thinking mushrooms have 1 carb but 1 fiber, so it should cancel itself out, and I can have my steak with some mayo or something (I'm low on fat and protein today.)
Ok, time for me to dash, Dinner to make and gotta get ready for work.

Weaning a stubborn baby, and other stream of consciousness nonsense
Kidlet is sleeping now in my room thanks to the early heat wave. No biggie, odds are he'll be back in his own bed tomorrow. I'm just hoping that tomorrow he will be feeling more up to trying a little formula. He really doesn't seem to like it at all. Never have I thought a little guy could spit so much so far.
I'm thinking I'll just keep cutting it with the good stuff (mom juice) till he's drinking it alone. Worst case, he'll get hungry enough to eat it, but he is stubborn like me and hubbs. Here's hoping for the best.
Also, bought some bacon spread from woot. Looks like 3g carbs/serving, which should be okay as a treat.
First day was okay food-wise, but now I have a mild headache and either munches or boredom. Gotta train the mind to be able to figure it out again. I really let myself go this time. I just love to eat in the worst way. I s'pose that if carbs are really addicting, I'm 100% an addict. Yeah, I'm craving snacks that I really don't need, and I know I need to avoid them like the plague. I don't want to end up diabetic because I eat like a cow, ya know? Been there, done that, and not wanting to have to do it again. I figure that once I'm ketotic, the physical cravings will slow, just the psychological ones will remain.
Food addiction. Geesh, who'd ever think I'd climb on that bandwagon? Problem is that it kinda makes sense. I seem to fit in all the columns for addiction. Seriously, even the scary ones that make people go for the interventions on tv and stuff. Something about the journeys starting with a single step or something like that.
Beddy bye time for me, kidlet will be up in 4 hours, give or take, and I have work tomorrow.

Hello! Itsa me again.
Heyas folkies.
Figured I needed to start something for myself again. Since I last blogged (that'd be Cashew Writes!, which is now defunct, and should be getting shut down shortly) I've done some interesting things that'd be fun to share. I've had the cutest baby in the world about 6 months ago, moved to a nicer apartment in a nicer neighborhood, and as of a week from now, will be changing shifts working to a more traditional work week. (still overnights though. Suckage.)
Currently, I've started a new diet very recently (just finished day 1)... I have an iPad that I use constantly, I love brushes and draw something, so posting pictures is a definite (did I mention that beautiful little boy I call my own?)
Still cooking gluten free, but eating LCHF myself now. Hubbs is a calorie counter. Thankfully the LCHF tends to go well with GF, but I'm going to eat clean as often as I can.
Okay, now, I'm off to investigate a decent app to blog with off the iPad... I usually have that with me more than I tend to sit at the computer lately.
